Sustainability Our Responsibility

Pellestova is located high in the Øyerfjellet mountains, surrounded by spectacular natural scenery and hundreds of kilometres of hiking and cross-country skiing trails. This unique setting makes the hotel a natural choice for guests seeking authentic mountain experiences throughout the year.

With such a privileged location comes a responsibility. We are committed to protecting the natural environment around us, supporting our local community and managing our resources with care. Our goal is to ensure that future generations can experience the mountains and landscapes we are fortunate to enjoy today.

The Green Key

Pellestova is certified by Green Key, an international eco-label for hotels, accommodation providers and tourism businesses committed to sustainable practices.

The certification sets strict requirements for areas such as energy efficiency, waste management, purchasing policies, resource consumption and social responsibility. For us, Green Key is both a recognition of the work we have already undertaken and a motivation to continue improving.

Through a range of practical initiatives, we work every day to reduce our environmental impact, protect the natural surroundings and contribute positively to the local community. Our goal is to offer memorable mountain experiences while taking responsibility for the future.

Our Butchery

At Slakteriet, locally sourced ingredients are at the heart of our concept. Much of the game served in the restaurant comes from the surrounding mountain region and is processed in our own on-site butchery, located in the same building as the restaurant.

Here, our skilled butchers oversee the entire process, from receiving the raw ingredients to creating the finished products. This close connection to every stage of production gives us a deep understanding of the ingredients we work with and allows us to make responsible use of every part.

Through Slakteriet, we aim to showcase local produce, traditional craftsmanship and Norwegian food culture, with the mountains and surrounding nature serving as the foundation for every dining experience.

Supporting Local Culture & Producers

Caring for our local community also means celebrating the people, stories and products that are deeply rooted in the region. At Pellestova, we work closely with local farmers, producers and suppliers to source ingredients with a strong connection to the surrounding area.

We are also committed to showcasing local culture through the artwork displayed throughout the hotel, with many of our rooms featuring pieces created by local artists. Each autumn, we host the Local Food Market, where producers from Mat fra Øyerfjellet are invited to present and sell their products to both guests and visitors.

By supporting local businesses, artisans and food producers, we help preserve traditions, strengthen the local economy and create authentic experiences that reflect the character of the mountains and the community around us.

Sustainable Hotel Operations

We continuously work to reduce our resource consumption and environmental impact through responsible and efficient hotel operations. Throughout the property, we use energy-efficient solutions such as LED lighting, smart building management systems and a geothermal heating system that provides renewable energy to both the hotel and nearby apartments.

We also focus on responsible resource use in our day-to-day operations. Waste is carefully sorted for recycling, guest bathrooms are equipped with refillable dispensers to reduce plastic consumption, and rooms are cleaned on request to help save water, energy and cleaning products. At the same time, we encourage our guests to contribute through simple, sustainable choices during their stay.

By combining modern technology with conscious everyday practices, we strive to minimise our environmental footprint while maintaining the high standards of comfort and hospitality our guests expect.

Green Mobility & Transportation

We aim to make it easier for our guests to make environmentally conscious choices during their stay. That’s why we offer electric vehicle charging stations, and guests visiting our restaurants can take advantage of our shuttle service, helping to reduce the need for individual car journeys.

We are also committed to reducing emissions associated with activities around the hotel. As part of this effort, we use an electrified snow groomer, significantly reducing diesel consumption while contributing to more sustainable maintenance of the cross-country ski trails throughout the area.
