Our butchery
At Pellestova, sustainability is not just about reducing distance — it’s about removing it entirely.
Our philosophy of “non-travelled food” means that many of our ingredients come directly from the surrounding mountains. Our own hunters source wild game from the pristine nature around Pellestova, and our skilled butchers process it with care in our on-site butchery.
From skinning to cutting, every step takes place in our own facilities, giving us a deep respect and understanding of the raw materials we use. This hands-on approach ensures quality, minimizes transport, and allows us to utilize every part of the animal responsibly.
The meat from our butchery is used across all our dining experiences – from flavorful pizza toppings and hearty hotel lunches to refined dishes at Slakteriet Restaurant. It’s a true expression of local craftsmanship, Norwegian hunting tradition, and our commitment to food with integrity.
